FRUITED TUNA SALAD CROISSANT SANDWICHES

INGREDIENTS
  • 1 5 ounce can solid white albacore tuna in water drained
  • 1 Granny Smith apple cored and diced (about 1 cup)
  • 1/2 cup diced celery
  • 1/2 cup chopped dates
  • 1/2 cup chopped walnuts
  • 1/3 cup real mayonnaise
  • 1 tablespoon minced shallots
  • 2 teaspoons Dijon mustard
  • 1 teaspoon lemon juice
  • 1/2 teaspoon curry powder
  • 4 large croissants
  • 4 leaves green leaf lettuce

DIRECTIONS

In large mixing bowl, combine all ingredients except croissants and lettuce.

Gently toss until well combined; salt and pepper to taste.

Cut croissants in half; divided salad among croissants. Garnish with lettuce.
