
BEAN SALSA



INGREDIENTS
- 1 29 ounce can pinto beans rinsed and drained
- 1/2 cup each diced red, green and yellow bell peppers
- 1 cup diced red onion
- 1/4 cup 100% pure olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons honey
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- - tortilla chips
DIRECTIONS
In large mixing bowl, combine all ingredients; salt and pepper to taste.
Cover and refrigerate several hours or overnight.
Serve with tortilla chips.
