POTATO & CORN PANCAKES

Serves : 16 pancakes

INGREDIENTS
  • 1 1/4 cups instant mashed potatoes flakes
  • 1 cup original pancake & waffle mix
  • 2 1/2 cups 2% milk
  • 2 large eggs
  • 2 tablespoons pure vegetable oil
  • 1 cup shredded mild Cheddar cheese
  • 1 cup whole kernel corn
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon garlic powder

DIRECTIONS

In large mixing bowl, combine potato flakes and pancake mix. Add milk, eggs and oil.

Whisk until just combined; stir in cheese, corn, onion powder and garlic powder. Let stand 10 minutes.

Heat flat skillet over medium heat. Add about ΒΌ cup batter onto skillet, repeat to fill skillet. Cook 2-3 minutes per side or until golden brown.
