CREAMY ASPARAGUS & MUSHROOM COUSCOUS

INGREDIENTS
  • 1 tablespoon 100% pure olive oil
  • 1/2 pound fresh asparagus trimmed, cut into 2-inch pieces
  • 1 3.5 ounce package shiitake mushrooms stems removed, sliced
  • 1/2 cup chopped red bell pepper
  • 1 tablespoon chopped garlic
  • 1 5.9 ounce package Parmesan couscous
  • 1/2 cup half & half
  • 1/4 cup chopped fresh basil leaves
  • - fancy shredded Italian style Parmesan cheese

DIRECTIONS

In medium skillet, heat oil over medium heat. Add asparagus, mushrooms, red peppers and garlic; salt and pepper to taste. Sauté until asparagus is crisp tender (about 5-7 minutes).

Meanwhile, in medium saucepan, prepare couscous according to package directions using half & half and water to equal water in directions.

Stir in asparagus mixture and basil. Garnish with Parmesan cheese, if desired.
