
LOADED BAKED POTATO SOUP



INGREDIENTS
- 1/2 16 ounce package bacon chopped
- 2 cups reduced sodium chicken broth
- 2 cups half & half
- 1 4.5 ounce package loaded scalloped potatoes
- 1/2 cup sour cream
- 1/4 cup chopped fresh chives
- - shredded mild Cheddar cheese optional
DIRECTIONS
In large saucepan or Dutch oven over medium heat, cook bacon until crisp; remove to paper towels. Drain off bacon drippings.
Add chicken broth, half & half and potatoes with cheese packet to pan. Bring to a boil; reduce heat and simmer 20-25 minutes or until potatoes are tender, stirring occasionally.
Remove from heat; stir in sour cream, chives and bacon. Serve topped with cheese, if desired.
