
FIRE ROASTED TOMATO BASIL SOUP



INGREDIENTS
- 1 teaspoon 100% pure olive oil
- 1/2 cup diced onion
- 2 14.5 ounce cans fire roasted diced tomatoes with garlic undrained
- 1 14.5 ounce can reduced sodium chicken broth
- 1/2 cup 2% milk
- 1/4 cup chopped fresh basil leaves
- 1 teaspoon balsamic vinegar
DIRECTIONS
In medium saucepan, heat oil over medium heat. Add onions; sauté until golden brown (about 6-8 minutes).
Add tomatoes and chicken broth; bring to a boil. Reduce heat; simmer 10 minutes.
Add milk, basil and vinegar; continue cooking until heated through (about 2-3 minutes).
