
BROCCOLI CHEESE SOUP



INGREDIENTS
- 1 tablespoon pure vegetable oil
- 1 cup chopped onion
- 1 tablespoon chopped garlic
- 1 16 ounce package frozen chopped broccoli
- 1 26 ounce can cream of mushroom soup
- 1/2 32 ounce loaf Super Cheezy processed cheese spread cubed
- 2 cups half & half
- 1 cup chicken broth
- - restaurant style cheese & garlic croutons optional
DIRECTIONS
In large saucepan, heat oil over medium heat. Add onions and garlic; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).
Add broccoli; sauté 2 minutes. Stir in soup, cheese, half & half and broth; bring to a simmer.
Simmer 10 minutes or until cheese is melted and soup is heated through. Serve with croutons, if desired.
