CARAMELIZED ONION & BLUE CHEESE SPREAD

Serves : about 2 cups

INGREDIENTS
  • 1 tablespoon pure vegetable oil
  • 2 cups thinly sliced onions
  • 2 teaspoons chopped fresh rosemary
  • 1 8 ounce package Neufchatel cheese softened
  • 1/2 cup light sour cream
  • 1/2 cup crumbled reduced fat blue cheese
  • - dash cayenne pepper
  • 1 tablespoon chopped fresh chives
  • - roasted vegetable snacker crackers

DIRECTIONS

In large skillet over medium-low heat, heat oil. Add onions and rosemary; salt and pepper to taste. Cook, stirring occasionally, until deep golden brown (about 20 minutes). Cool.

2. Meanwhile, in medium mixing bowl, combine Neufchâtel, sour cream, blue cheese and cayenne; using an electric mixer, mix until well combined.

Stir in cooled onions and chives; salt and pepper to taste. Serve with crackers.
