
PROSCIUTTO & PESTO WRAPPED SCALLOPS



INGREDIENTS
- 8 fresh sea scallops
- 8 slices Culinary Circle Sliced Prosciutto cut in half lengthwise
- 6 teaspoons traditional basil pesto sauce & spread
- 1 tablespoon olive oil
DIRECTIONS
Pat scallops dry with clean paper towels; season with pepper, if desired. Set aside.
Gently remove slices of prosciutto from package. Fold in half lengthwise. Spread 1 teaspoon of pesto over fold prosciutto. Place scallop on one end of prosciutto and roll up. Repeat with remaining scallops.
In large skillet, heat oil over medium-high heat. Add scallops and sear on all sides including prosciutto, cooking until scallops are opaque in color and cooked through (about 5-7 minutes). Be careful not to overcook scallops.
