CREAMY PEACH BREAKFAST QUINOA

INGREDIENTS
  • 2 cups unsweetened vanilla almondmilk
  • 1 16 ounce package frozen sliced peaches chopped
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup white quinoa rinsed
  • - nonfat vanilla Greek yogurt optional

DIRECTIONS

In medium saucepan, combine milk, peaches, cinnamon and salt; bring to a boil.

Add quinoa and return to a boil. Reduce heat to low; cover and simmer 15-20 minutes or until liquid has been absorbed, stirring occasionally.

Serve with a dollop of yogurt, if desired.
