
MEXICAN CORN



INGREDIENTS
- 2 cups frozen super sweet corn thawed, well drained
- 2 tablespoons pure vegetable oil
- 1/2 cup diced green bell peppers
- 1/2 teaspoon chipotle chile pepper powder
- - dash cayenne pepper
- 1/2 cup crumbled Mexican Cotija cheese
- 1 tablespoon real mayonnaise
- 1 tablespoon sour cream
- 2 tablespoons chopped fresh cilantro
- - juice of 1/2 a lime
DIRECTIONS
Dry corn in clean paper towels; set aside. In large skillet, heat oil over high heat. Add corn, peppers, chipotle chile pepper and desired amount of cayenne pepper; salt to taste. Sauté until browned (about 5-7 minutes).
Remove from heat. Stir in cheese, mayonnaise, sour cream and cilantro. Salt and pepper to taste.
Squeeze lime over corn. Serve.
