
MACARONI & CHEESE
with Chicken & Broccoli



INGREDIENTS
- 1/2 13.25 ounce package whole wheat rotini
- 2 cups frozen chopped broccoli
- 1 12 ounce can evaporated skim milk
- 4 ounces Neufchatel cheese softened, cubed
- 2 cups fancy shredded reduced fat mild Cheddar cheese divided
- 1/2 cup fat free cottage cheese
- 2 cups chopped cooked chicken
DIRECTIONS
Prepare pasta and broccoli according to package directions. Drain.
Meanwhile, in food processor or blender, combine milk, neufchâtel, 1½ cups Cheddar and cottage cheese; salt and pepper to taste. Process until smooth.
Combine all ingredients in a greased 2-quart baking dish; top with remaining Cheddar cheese. Bake in a preheated 375°F oven 20-25 minutes or until bubbly and golden brown.
