MINI CORN DOGS

INGREDIENTS
  • 1 cup self rising white cornmeal mix
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 cup honey
  • 2 tablespoons pure vegetable oil plus additional oil for frying
  • 1 large egg beaten
  • 1 16 ounce package little wieners

DIRECTIONS

In large bowl, combine cornmeal, flour and salt. In medium bowl, whisk together buttermilk, honey, oil and egg; whisk into flour mixture. Let stand 10 minutes.

Pour enough oil into a Dutch oven or large saucepan to reach a depth of 2 inches. Heat oil over medium-high heat until oil reaches 375°F on a deep fry thermometer.

In batches, dip wieners in batter; carefully place in hot oil. Fry, turning occasionally, until golden brown (about 2-3 minutes). Remove from oil with slotted spoon and drain on paper towels. Repeat with remaining wieners. Serve hot with ketchup and mustard.
