
PORK POSOLE



INGREDIENTS
- 1 tablespoon 100% pure olive oil
- 1 pound boneless pork shoulder cubed
- 1 cup chopped onion
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon chopped garlic
- 1/4 teaspoon cayenne pepper
- 3 cups reduced sodium chicken broth
- 2 15 ounce cans golden hominy drained
- 1/4 cup chopped fresh cilantro
DIRECTIONS
In large saucepan or Dutch oven, heat oil over medium-high heat. Add pork, onions, cumin, chili powder, garlic and cayenne; salt and pepper to taste. Sauté until onions are soft (about 3-5 minutes).
Add chicken broth and hominy; bring to a boil. Reduce heat and simmer, covered, 1½ hours or until pork is fork tender.
Stir in cilantro. Serve with lime wedges and corn tortillas, if desired.
