HEARTY VEGETABLE BEAN SOUP

Total Time : 2 hours + soaking
Serves : 6 servings

INGREDIENTS
  • 2 tablespoons pure vegetable oil
  • 1 cup chopped carrots
  • 1 cup chopped onion
  • 2 teaspoons chopped garlic
  • 2 teaspoons Louisiana hot sauce
  • 1 teaspoon chili powder
  • 6 cups vegetable broth
  • 1 16 ounce package dried 16 bean soup mix with ham seasoning soaked, rinsed and drained
  • 1 14.5 ounce can diced tomatoes with garlic & onion undrained
  • 5 ounces fresh baby spinach leaves

DIRECTIONS

In large saucepan or Dutch oven, heat oil over medium-high heat. Add carrots, onions, garlic, hot sauce and chili powder; sauté until onions are softened (about 3-5 minutes).

Add broth, beans (discard ham flavor packet) and tomatoes. Bring to a boil; reduce heat and simmer until beans are tender (about 1½-2 hours).

Stir in spinach last 5 minutes; salt and pepper to taste.
