
CREAMY WHITE CHEDDAR & BROCCOLI SOUP



INGREDIENTS
- 1 cup finely chopped carrots
- 1 cup finely chopped celery
- 1/2 cup finely chopped onion
- 1 14.5 ounce can reduced sodium chicken broth
- 2 cups frozen chopped broccoli
- 3 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups 2% milk
- - dash cayenne pepper optional
- 2 cups shredded white mild Cheddar cheese
DIRECTIONS
In medium saucepan, combine carrots, celery, onions and chicken broth. Bring to a boil; reduce heat and simmer 10 minutes.
Add broccoli; continue simmering 5 minutes. Remove from heat; set aside.
Meanwhile, in large saucepan or Dutch oven, melt butter over medium heat. Whisk in flour until smooth and bubbly; slowly whisk in milk. Season with desired amount of cayenne pepper; salt and pepper to taste.
Stir in chicken broth with vegetables. Continue cooking, stirring constantly, until mixture thickens and comes to a boil. Reduce heat; stir in cheese. Continue cooking until cheese melts.
