
CREAMY CHICKEN & RICE SOUP



INGREDIENTS
- 1 teaspoon pure vegetable oil
- 1/2 cup chopped onion
- 3 cups reduced sodium chicken broth
- 2 10 ounce cans chicken breast with rib meat in water drained
- 1 cup half & half
- 1 1/2 cups frozen peas & carrots
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon poultry seasoning
- 1 1/2 cups instant white rice
DIRECTIONS
In medium saucepan, heat oil over medium heat. Add onions and sauté until softened (about 3-5 minutes).
Add chicken broth, chicken, half & half, vegetables, thyme and poultry seasoning. Bring to a boil, stirring frequently.
Stir in rice and simmer 5 minutes or until rice is tender. Salt and pepper to taste. Soup will thicken upon standing.
