CREAM OF...SOUP

...Celery, Mushroom, Chicken, Potato

Serves : 3-4 servings

INGREDIENTS
  • 2 tablespoons pure vegetable oil
  • 1/4 cup minced onion
  • 1 teaspoon minced garlic
  • 3 tablespoons all-purpose flour
  • 4 cups near- boiling water
  • 1 cup instant nonfat dry milk
  • 1/2 cup instant mashed potatoes flakes
  • 4 teaspoons instant chicken bouillon
  • 1 teaspoon dried parsley flakes

DIRECTIONS

In large saucepan or Dutch oven, heat oil over medium heat. Add onions and garlic; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).

Whisk in flour; cook 1 minute. Whisk in hot water; bring to a boil.

Stir in remaining ingredients; simmer 10-15 minutes or until thickened, stirring occasionally.

Soup Variations:

Cream of Celery Soup - add ¾ cup minced celery with onions and garlic. Increase sauté time to 5-7 minutes or until celery is softened.
Cream of Mushroom Soup – add 2 cups chopped fresh mushrooms with onions and garlic. Increase sauté time to 6-8 minutes or until mushrooms are softened.
Cream of Chicken Soup – add 1 (5 ounce) can Essential Everyday Chicken Breast with Rib Meat, drained, with ingredients in step three.
Cream of Potato Soup – add 2 cups diced cooked potatoes with ingredients in step three.
