MOLASSES COOKIES

INGREDIENTS
  • 1 1/2 cups granulated sugar divided
  • 1/2 cup butter softened
  • 2 large eggs
  • 1/2 cup molasses
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt

DIRECTIONS

In large mixing bowl, combine 1 cup sugar, butter and eggs; using an electric mixer on medium speed, beat until creamed. Add molasses, mixing until well combined.

Reduce mixer to low; slowly add in flour, baking soda, cinnamon, cloves, ginger and salt; mix until well combined. Refrigerate dough, covered, 1 hour.

Shape dough into 1-inch balls; roll in remaining ½ cup sugar. Place balls 2-inches apart on ungreased baking sheet. Bake in a preheated 375°F oven 8-10 minutes or until tops are cracked. Remove to wire rack to cool completely.
