DOUBLE CHOCOLATE MACADAMIA COOKIES

INGREDIENTS
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup butter softened
  • 1/2 cup all vegetable shortening
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 10 ounce package white chocolate chips
  • 3/4 cup chopped dry roasted macadamia nuts

DIRECTIONS

In large mixing bowl, combine sugars, butter, shortening, eggs and vanilla. Using an electric mixer on medium speed, beat until creamed, scraping bowl often.

In another bowl, combine flour, baking cocoa, baking soda and salt. Slowly add to butter mixture until well combined. Fold in chocolate chips and nuts.

Drop by round teaspoonfuls onto an ungreased baking sheet. Bake in a preheated 350°F oven 10-12 minutes or until just set. Cool on baking sheet 1 minute; remove to wire rack to cool completely.
