
BASIC MUFFINS



INGREDIENTS
- 2 cups self rising flour
- 1/3 cup granulated sugar
- 1 cup 2% milk
- 1/4 cup extra light tasting olive oil
- 1 large egg beaten
DIRECTIONS
In large mixing bowl, combine flour and sugar. Add milk, oil and egg; stir until just combined. Do not over mix.
Fold in one of the variations, if desired. Divide among 1 (12 count) paper lined or greased muffin pan.
Bake in a preheated 400°F oven 20-25 minutes or until toothpick inserted in center comes out clean.
Variations:
Blueberry - add ¾ cup fresh or Essential Everyday Frozen Blueberries
Banana Walnut - add 1 cup mashed bananas and ½ cup Essential Everyday Chopped Walnuts
Carrot Raisin - add ¾ cup shredded carrots, ½ cup Essential Everyday Raisins and ¼ teaspoon Essential Everyday Ground Cinnamon
Orange Poppy Seed - add ¼ cup Essential Everyday Orange Juice, 2 teaspoons poppy seeds and 1 teaspoon orange zest
