
GRILLED PORK CHOPS
with Caramelized Apple Gouda Stuffing



INGREDIENTS
- 1 tablespoon butter
- 1 cup finely chopped Granny Smith apple
- 1/2 cup sliced onion
- 1 teaspoon minced garlic
- 1/8 teaspoon cayenne pepper
- 1/2 cup Shredded Gouda Cheese
- 4 thick cut boneless pork loin chops
DIRECTIONS
Add butter to a medium skillet over medium heat; combine apple, onion, garlic and cayenne pepper in the pan; saute until onions are caramelized, stirring occasionally (about 10 minutes). Salt and pepper to taste; remove from heat, stir in Gouda, set aside.
Meanwhile, butterfly pork chops by using a sharp knife and cutting parallel to work surface using short slicing motions. Starting 1/3 the way downside of chop cut horizontally almost all the way through, stopping about 1 inch from the edge. Salt and pepper to taste.
Divide apple mixture into 4 equal parts; stuff into pork chops.
Prepare grill to medium-low heat; place chops on grill. Grill, turning occasionally, until internal temperature reaches 155 degree F.
Remove from grill; allow to rest 10 minutes (temperature will continue to rise 5 degree while resting to 160 degree F).
