
PASTA PRIMAVERA WITH RICOTTA



INGREDIENTS
- 1/2 12 ounce package farfalle
- 1 tablespoon 100% pure olive oil
- 1 cup yellow and/or red bell pepper
- 1 cup chopped fresh broccoli
- 1 cup zucchini halved and sliced
- 1/2 cup chopped red onion
- 2 tablespoons chopped garlic
- 1 cup fat free ricotta cheese
- 2 tablespoons chopped fresh basil leaves
- 1/4 cup fancy shredded Italian style Parmesan cheese
DIRECTIONS
Prepare pasta according to package directions; drain, reserving ½ cup pasta water.
Meanwhile, in large skillet, heat oil over medium-high heat. Add peppers, broccoli, zucchini, onion and garlic; salt and pepper to taste. Sauté vegetables until tender (about 6-8 minutes).
Stir in ricotta, basil and reserved pasta water. Toss with pasta and Parmesan cheese.
