NO-BOIL LASAGNA

INGREDIENTS
  • 1 pound lean ground beef
  • 1 cup chopped onion
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 2 24 ounce jars traditional pasta sauce
  • 1 24 ounce container low fat cottage cheese
  • 2 large eggs
  • 1/2 cup fancy shredded Italian style Parmesan cheese
  • 12 lasagna noodles uncooked
  • 3 cups shredded mozzarella cheese

DIRECTIONS

In large skillet over medium-high heat, cook and crumble beef, onions, garlic and Italian seasonings until no longer pink; drain. Add pasta sauce; set aside.

Meanwhile, in medium bowl, combine cottage cheese, eggs and Parmesan cheese. Salt and pepper to taste; set aside.

Spread 2 cups meat sauce in bottom of a 13x9-inch baking dish. Layer with 1/3 lasagna noodles, 1/3 meat sauce, ½ cottage cheese mixture and 1/3 mozzarella cheese. Repeat layers ending with layer of noodles, meat sauce and mozzarella cheese.

Bake, covered, in a preheated 375°F oven 45 minutes. Remove cover and continue baking 15 minutes or until heated through. Remove from oven and let stand for 15 minutes before serving.
