LINGUINE WITH LEMON, BROCCOLI & BACON

INGREDIENTS
  • 1/2 16 ounce package linguine
  • 1/2 16 ounce package thick sliced bacon chopped
  • 1 16 ounce package frozen broccoli florets
  • 1 tablespoon chopped garlic
  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup 100% pure olive oil
  • 1 tablespoon chopped fresh thyme leaves
  • 2 teaspoons lemon zest
  • 1/2 cup fancy shredded Italian style Parmesan cheese

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, over medium-high heat, cook bacon until crisp; remove to paper towels. Drain off excess grease from pan. Add in broccoli and garlic; sauté until heated through.

Add pasta, lemon juice, oil, thyme and zest; toss to coat. Salt and pepper to taste; continue cooking until heated through. Toss with bacon and cheese.
