HAM & SPINACH ZITI

INGREDIENTS
  • 1/2 16 ounce package ziti
  • 3 tablespoons butter
  • 1 cup chopped onion
  • 1 tablespoon chopped garlic
  • 1 10 ounce package frozen chopped spinach thawed, well drained
  • 1/4 teaspoon cayenne pepper
  • 1/3 cup all-purpose flour
  • 3 cups 2% milk
  • 2 tablespoons Dijon mustard
  • 3 cups chopped ham
  • 8 ounces Gruyère or Swiss cheese shredded, divided
  • 1 tablespoon chopped fresh rosemary

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large saucepan, melt butter over medium heat. Add onions and garlic; sauté until onions are softened (about 3-5 minutes). Add spinach and cayenne pepper; continue sautéing until all liquid is absorbed.

Stir in flour; cook 1 minute. Stir in milk and mustard, cook, stirring constantly, until thickened. Add ham, pasta, 1 cup cheese and rosemary; salt and pepper to taste. Mix until well combined.

Transfer to a greased 13x9-inch baking dish. Sprinkle with remaining cheese. Bake in a preheated 375°F oven 30 minutes or until golden brown and bubbly.
