ENCHILADA RAVIOLI BAKE

Serves : 6 servings

INGREDIENTS
  • 1 (25 ounce) package frozen beef ravioli
  • 1 (14.5 ounce) can diced tomatoes with green chiles drained
  • 1 (10 ounce) can mild enchilada sauce
  • 2 teaspoons ground cumin
  • 2 cups shredded colby jack cheese
  • 1 cup broken up tortilla chips optional
  • - sliced green onions optional
  • - sliced ripe olives optional

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large bowl, combine tomatoes, enchilada sauce and cumin. Add pasta and 1 cup cheese; toss to coat. Transfer to a greased 2�-quart baking dish. Top with remaining cheese.

Bake in a preheated 375�F oven 25 minutes or until golden brown and bubbly. Remove from oven and top with tortilla chips, green onions and black olives, if desired.
