BEAN GUACAMOLE

Serves : 2 cups

INGREDIENTS
  • 2 cups cooked and cooled dried large lima beans
  • 1 ripe avocado pitted and peeled
  • 1/4 cup 100% pure olive oil
  • 2 tablespoons tamarind concentrate or fresh squeezed lime juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper
  • 1 medium tomato diced

DIRECTIONS

In food processor or blender, combine all ingredients except tomato; process to desired consistency.

Transfer to a serving bowl and stir in tomato; salt and pepper to taste.

Serve with tortilla chips, pita chips and assorted vegetables.
