
CREAMED SPINACH



INGREDIENTS
- 1 tablespoon organic extra virgin olive oil
- 1 16 ounce container organic baby spinach
- 1 cup chopped onion
- 1 tablespoon chopped garlic
- 2 tablespoons all-purpose flour
- 1 cup organic half & half
- 1/2 cup Culinary Circle Shredded Parmesan Cheese
- 1 teaspoon lemon zest
- 2/3 cup crispy Panko style plain bread crumbs
- 1 tablespoon organic butter
- 1/2 teaspoon organic Italian seasoning
DIRECTIONS
In large skillet, heat oil over medium heat. Add spinach (in batches if needed), onion and garlic; salt and pepper to taste. Sauté until spinach is wilted and onions are softened (about 5 minutes). Drain excess liquid from pan.
Stir in flour to coat spinach; cook 1 minute. Gradually stir in half & half, cheese and lemon zest. Transfer to a greased 2-quart baking dish. Combine bread crumbs, butter and Italian seasoning. Sprinkle over spinach.
Bake in a preheated 350°F oven 20-25 minutes or until golden brown.
