POTATO & ASPARAGUS HASH

INGREDIENTS
  • 3 tablespoons organic extra virgin olive oil
  • 1/2 cup chopped yellow onion
  • 1/2 cup chopped red bell peppers
  • 1 tablespoon chopped garlic
  • 1 pound cooked and cubed organic baby red potatoes
  • 1 pound fresh asparagus trimmed, cut into 1-inch pieces
  • 2 teaspoons chopped organic fresh thyme
  • 1 teaspoon chopped organic fresh rosemary
  • 1/4 cup Culinary Circle Shredded Parmesan Cheese
  • - poached organic large brown eggs optional

DIRECTIONS

In a large skillet, heat oil over medium heat. Add onions, peppers and garlic. Sauté until onions are softened (about 3-5 minutes).

Add potatoes; salt and pepper to taste. Sauté 5 minutes. Add asparagus, thyme and rosemary; continue sautéing until desired doneness and potatoes are slightly browned.

Sprinkle with cheese and serve with poached eggs, if desired.
