
POTATO & ASPARAGUS HASH



INGREDIENTS
- 3 tablespoons organic extra virgin olive oil
- 1/2 cup chopped yellow onion
- 1/2 cup chopped red bell peppers
- 1 tablespoon chopped garlic
- 1 pound cooked and cubed organic baby red potatoes
- 1 pound fresh asparagus trimmed, cut into 1-inch pieces
- 2 teaspoons chopped organic fresh thyme
- 1 teaspoon chopped organic fresh rosemary
- 1/4 cup Culinary Circle Shredded Parmesan Cheese
- - poached organic large brown eggs optional
DIRECTIONS
In a large skillet, heat oil over medium heat. Add onions, peppers and garlic. Sauté until onions are softened (about 3-5 minutes).
Add potatoes; salt and pepper to taste. Sauté 5 minutes. Add asparagus, thyme and rosemary; continue sautéing until desired doneness and potatoes are slightly browned.
Sprinkle with cheese and serve with poached eggs, if desired.
