
PLUM CREAM TART



INGREDIENTS
- 1/2 15 ounce package refrigerated pie crust (1 crust)
- 5 fresh plums sliced
- 3 large egg yolks
- 3/4 cup sour cream
- 3/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 cup whipping cream
- 1/2 teaspoon pure vanilla extract
- 2 tablespoons powdered sugar
- - fresh mint leaves for garnish
DIRECTIONS
Unroll pie crust into a greased 10-inch tart pan with removable bottom. Gently press and form crust into and up sides of tart pan. Remove any excess crust from top. Arrange plum slices in crust. Place tart pan on a baking sheet.
In medium bowl, combine egg yolks, sour cream, sugar and flour until light and fluffy. Pour over plums. Bake in a preheated 350°F oven for 50-60 minutes or until custard is set around edges and a light golden color.
Remove from oven and place tart pan on a cooling rack. When cool, carefully remove side of tart pan.
In medium bowl, combine whipping cream, vanilla and powdered sugar. Using an electric mixer, beat on high until stiff peaks form. Serve whipped cream with tart and garnish with fresh mint leaves, if desired.
