CURRIED CHICKEN SALAD PITAS

INGREDIENTS
  • 1/2 cup nonfat plain Greek yogurt
  • 2 tablespoons light mayonnaise
  • 1 tablespoon curry powder
  • 1 tablespoon fresh squeezed lemon juice
  • 1 teaspoon honey
  • 3 cups chopped cooked chicken breast
  • 1 1/2 cups quartered green grapes
  • 1/2 cup cashew halves & pieces
  • 1/2 cup diced celery
  • 3 tablespoons chopped green onions
  • 6 green lettuce leaves
  • 6 whole wheat pita pocket halves

DIRECTIONS

In medium bowl, combine yogurt, mayonnaise, curry powder, lemon juice and honey; salt and pepper to taste.

Stir in chicken, grapes, cashews, celery and onions. Toss until well coated.

Place lettuce leaves in pitas. Divide chicken salad among pitas. Serve immediately.
