MACADAMIA NUT CRUSTED HALIBUT

INGREDIENTS
  • 1 6.5 ounce jar dry roasted macadamia nuts
  • 1 cup crispy Panko style plain bread crumbs
  • 1/2 cup fancy shredded Italian style Parmesan cheese
  • - dash cayenne pepper
  • 1/4 cup all-purpose flour
  • 1 large egg beaten
  • 1 1/2 pounds halibut fillets skin removed
  • - 100% extra virgin oil olive no-stick cooking spray

DIRECTIONS

Process nuts in a food processor or blender until finely chopped. Add in bread crumbs, cheese and cayenne pepper; salt and pepper to taste. Process until combined; transfer to a shallow dish and set aside.

Place flour in second shallow dish and beaten egg in a third. Dust halibut fillets in the flour, dip in egg, and coat with macadamia breading. Place fillets on a baking sheet that has been generously sprayed with cooking spray. Spray top of fish with additional cooking spray.

Bake in a preheated 400°F oven until fish flakes easily with a fork (about 10 minutes per inch of thickness).
