
FLOUNDER & SPINACH ROLLS



INGREDIENTS
- 2 tablespoons + 2 teaspoons melted butter divided
- 1 teaspoon minced garlic
- 1/4 teaspoon ground black pepper
- 1 pound flounder fillets
- 1/2 cup shredded Monterey Jack cheese
- 1 cup firmly packed fresh spinach leaves
- 2 tablespoons Italian style bread crumbs
DIRECTIONS
In small bowl, combine 2 tablespoons melted butter, garlic and pepper; lightly brush fillets with garlic butter. Sprinkle with cheese and top with spinach.
Roll-up fillets and place seam-side-down in an 8x8-inch baking dish that has been lightly brushed with garlic butter. Brush tops of fish with remaining garlic butter.
Combine remaining 2 teaspoons melted butter with bread crumbs; sprinkle over fish. Bake in a preheated 400°F oven until fish flakes easily with a fork (about 10 minutes per inch of thickness).
