
PORK & SWEET POTATO CASSEROLE



INGREDIENTS
- 1 tablespoon 100% pure olive oil
- 1 pound pork tenderloin cubed
- 1/2 cup chopped red onion
- 1 teaspoon dried thyme leaves
- 1 15 ounce jar creamy Alfredo pasta sauce
- 1/2 cup Culinary Circle Blue Cheese Crumbles
- 1/2 cup sweetened dried cranberries
- 1 19 ounce package frozen sweet potato rounds
DIRECTIONS
In large skillet, heat oil over medium-high heat. Add pork, onions and thyme; salt and pepper to taste. Sauté until pork is browned (about 3-5 minutes). Remove from heat.
Stir in Alfredo, cheese and cranberries. Stir in half the sweet potato rounds. Transfer to a greased 2-quart baking dish. Top with remaining sweet potato rounds.
Bake in a preheated 400°F oven 30 minutes or until bubbly and potato rounds are golden brown and crispy.
