PINTO BEANS & BARLEY SALAD

INGREDIENTS
  • 4 cups cooked and cooled dried pinto beans
  • 2 cups cooked and cooled pearl barley
  • 1 medium tomato diced
  • 1 cup diced cucumber
  • 1/2 cup Italian dressing
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 2 fresh jalapeƱo peppers seeded and diced

DIRECTIONS

In large bowl, combine all ingredients; toss to coat. Salt and pepper to taste.

Cover and refrigerate several hours or overnight.
