
PINTO BEANS & BARLEY SALAD



INGREDIENTS
- 4 cups cooked and cooled dried pinto beans
- 2 cups cooked and cooled pearl barley
- 1 medium tomato diced
- 1 cup diced cucumber
- 1/2 cup Italian dressing
- 1/2 cup diced red onion
- 1/2 cup diced red bell pepper
- 2 fresh jalapeƱo peppers seeded and diced
DIRECTIONS
In large bowl, combine all ingredients; toss to coat. Salt and pepper to taste.
Cover and refrigerate several hours or overnight.
