MANDARIN, ALMOND & GORGONZOLA SALAD

INGREDIENTS
  • 1/4 cup granulated sugar
  • 1/2 cup sliced almonds
  • 1 15 ounce can Mandarin oranges in light syrup drained
  • 5 ounces mixed salad greens
  • 1/2 cup gorgonzola cheese crumbles
  • 1/3 cup honey-Dijon salad dressing
  • 1/4 cup sliced green onions

DIRECTIONS

In small skillet, melt sugar over medium heat. Add almonds; cook, stirring constantly, until almonds become caramelized.

Transfer to waxed paper; quickly separate almonds. Let cool.

In large bowl, combine oranges, salad greens, cheese, dressing, onions and almonds; toss to coat. Serve immediately.
