MACARONI SALAD

INGREDIENTS
  • 1 8 ounce package elbow macaroni
  • 2 large eggs hard boiled and chopped
  • 1 medium tomato seeded and chopped
  • 1 cup chopped cucumber
  • 1/2 cup chopped red bell pepper
  • 1/4 cup sliced green onions
  • 3/4 cup real mayonnaise
  • 1 1/2 teaspoons white vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 16 ounce package bacon cooked and crumbled

DIRECTIONS

Prepare pasta according to package directions; rinse with cold water and drain.

In large bowl, combine cooled pasta, eggs, tomatoes, cucumbers, red pepper and onions; set aside.

In medium bowl, combine mayonnaise, vinegar and mustard; salt and pepper to taste. Toss with salad.

Refrigerate, covered, several hours or overnight. Toss with bacon just before serving.
