ITALIAN PASTA SALAD

INGREDIENTS
  • 1 13.25 ounce package whole wheat rotini
  • 1 cup small pitted ripe olives
  • 1 cup cubed mild Cheddar cheese
  • 1 cup cubed Monterey Jack cheese
  • 1 cup cubed pepperoni (from stick)
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red onion
  • 1 16 ounce bottle light Italian dressing

DIRECTIONS

Prepare pasta according to package directions; rinse with cold water and drain.

In large bowl, combine cooled pasta with remaining ingredients. Salt and pepper to taste.

Refrigerate, covered, several hours or overnight. Toss salad before serving.
