
GRILLED HALIBUT & MANGO SALSA



INGREDIENTS
- 1/4 cup fresh squeezed lime juice divided
- 2 tablespoons organic extra virgin olive oil
- 2 teaspoons chopped garlic divided
- 1 teaspoon lime zest
- 1/2 teaspoon organic ground cumin
- 1/2 teaspoon chili powder
- 1/8 teaspoon organic ground cayenne pepper
- 1 pound halibut fillets skin removed
- 1 cup chopped fresh mango
- 1 cup chopped organic sweet grape tomatoes
- 1 ripe avocado pitted, peeled and chopped
- 1/2 cup crumbled Mexican Queso fresco cheese
- 1/4 cup chopped organic fresh cilantro
- - yellow corn tortilla chips
DIRECTIONS
In small bowl, combine 2 tablespoons lime juice, oil, 1 teaspoon garlic, lime zest, cumin, chili powder and cayenne pepper; salt and pepper to taste. Place halibut in a 1-gallon recloseable food storage bag. Add marinade; seal bag and gently toss to coat. Marinate 30 minutes.
Prepare grill or grill pan to medium heat. Remove halibut from marinade; discard marinade. Place halibut on grill; grill, turning once, until internal temperature reaches 145°F on an instant read thermometer (about 10 minutes per inch of thickness).
Remove from grill; cool completely and cut into 1-inch pieces. In large bowl, combine mangos, tomatoes, avocado, cheese, cilantro, remaining 2 tablespoons lime juice and remaining 1 teaspoon garlic; salt and pepper to taste. Toss to combine well.
Add fish and gently fold together. Serve with tortilla chips.
