BAKED PENNE & MEATBALLS

INGREDIENTS
  • 1/2 16 ounce package penne rigate
  • 1 tablespoon pure vegetable oil
  • 1 pound frozen Italian style meatballs (about 36)
  • 1 1/2 cups tomato, garlic & onion pasta sauce
  • 1 1/2 cups part skim ricotta cheese
  • 1 cup half & half
  • 1 6 ounce package fancy shredded Italian style Parmesan cheese divided

DIRECTIONS

Prepare pasta according to package directions; drain. Meanwhile, in large skillet, heat oil over medium heat. Add meatballs; cook, stirring occasionally, until heated through (about 10 minutes).

In large bowl combine pasta sauce, ricotta, half & half and ¾ cup Parmesan cheese; salt to taste. Stir in pasta and meatballs. Transfer to a greased 2½-quart baking dish.

Top with remaining Parmesan cheese. Bake in a preheated 375°F oven 30 minutes or until bubbly and golden brown.
