
GRILLED MARGARITA CHICKEN



INGREDIENTS
- 1/4 cup 100% pure olive oil
- 1/4 cup tequila optional
- 1 10 ounce can frozen margarita mix thawed
- 1/4 cup orange juice
- 1/4 cup chopped fresh cilantro
- 1 tablespoon minced garlic
- 1 teaspoon orange zest
- 1 1/2 pounds boneless, skinless chicken breasts
DIRECTIONS
In medium bowl, combine margarita mix, oil, tequila, orange juice, cilantro, garlic and orange zest; salt and pepper to taste.
Place chicken breasts in a 1-gallon recloseable food storage bag; pour in marinade. Seal bag; toss to coat. Refrigerate several hours or up to overnight, turning occasionally.
Prepare grill to medium heat. Remove chicken from marinade; discard marinade. Place chicken on grill; grill, turning once, 10-12 minutes or until internal temperature reaches 170°F on an instant read thermometer.
