INGREDIENTS:

DIRECTIONS:

  1. In large saucepan or Dutch oven, heat oil over medium-high heat. Add in onions and peppers. Sauté until onions are softened (3-5 minutes).
  2. Add in chicken, marinade and chicken broth. Bring to a boil; reduce heat and simmer 10 minutes.
  3. Stir in beans, corn and tomatoes; continue simmering 10 minutes. Remove from heat and stir in cilantro.
  4. Ladle soup into bowl. Garnish with a dollop of sour cream, avocado and tortilla chips.
