INGREDIENTS:
- 1 tablespoon olive oil
- 1 cup chopped onion
- ½ cup chopped green bell peppers
- ½ cup chopped red bell peppers
- 2 cups Culinary Circle™ shredded Culinary Circle¿ Roasted Chicken
- 1 (12 ounce) bottle Culinary Circle™ Mayan Fajita Marinade & Cooking Sauce
- 2 (14 ounce) cans 33% less sodium chicken broth
- 1 (15 ounce) can pinto beans, drained
- 1 (15 ounce) can corn kernels, drained
- 1 (14.5 ounce) can diced tomatoes
- ¼ cup chopped fresh cilantro
- Garnish: chopped avocado, sour cream and tortilla chips
DIRECTIONS:
- In large saucepan or Dutch oven, heat oil over medium-high heat. Add in onions and peppers. Sauté until onions are softened (3-5 minutes).
- Add in chicken, marinade and chicken broth. Bring to a boil; reduce heat and simmer 10 minutes.
- Stir in beans, corn and tomatoes; continue simmering 10 minutes. Remove from heat and stir in cilantro.
- Ladle soup into bowl. Garnish with a dollop of sour cream, avocado and tortilla chips.
